Authenticity

We are 50 years late, and we are proud of it! Bread has a simple composition: flour, water and salt. Within our production processes, we use only natural raw materials and a manufacturing method that is truly in compliance with tradition.

Our modern diet has experienced a huge change. The background is that the market, laws and modern consumer protection demands low prices, absolute hygiene, practical packaging, easy processing at home.

And so the producers, growers, and breeders have invented the so-called mass production. The pace of production has been accelerated, yields increased and the consumer progressively “retrained” so that the consumer hardly knows or recognizes the original. All this is very far from Hippocrates statement: “Our diet should be our first medicine”.

So also our daily bread! For the same reasons of supposed profitability, fermentation times were reduced, dough became machinable and the rules of traditional bakery were slowly forgotten and then lost. As a result, the rule faster, prettier, worse was born.

Pains & Tradition was founded to prove that the true bread tradition is possible.
