The properties of the surgical steel used (nitrogen instead of carbon) result in a high hardness of 58 HRC and a 4-fold higher corrosion resistance. In combination with the stabilised wood (does not swell on contact with water), sknife knives are well established in seaside hotels and on yachts; and sknife has even made its mark in the best hotels on the Côte d'Azur.
The standard handle is made of black dyed ash or walnut. But the grey ash (initially for Franck Giovannini Crissier) and light ash (made especially for the Roca brothers Girona) versions also match the colour of the interior.
