EggField One Aquafaba offers a plant-based alternative to egg whites and whole eggs, particularly suitable for use in baked goods, desserts, sauces, dressings, and cooking.

Usage

Suitable as an ingredient in all plant-based products where the foaming, emulsifying, or binding properties of chicken egg are desired:

  • Meringues
  • Cookies (e.g., cinnamon stars, Springerle)
  • Pies, brownies & cakes
  • Mousse / dessert cream (e.g., chocolate mousse)
  • Fillings
  • Pasta (e.g., spaetzle, dumplings)
  • Mayonnaise alternatives
  • Sauces & dressings
  • Coatings (e.g., salted almonds)
  • Ingredient for cocktails & mixed drinks (e.g., sours)

Usage Instructions

EggField One Aquafaba can be beaten into a foam just like chicken egg whites. The beating time is approximately two to three times longer than chicken egg whites. Foaming is possible both when chilled and at room temperature. After whipping, EggField One Aquafaba should be processed promptly to make the most of the foam volume obtained. If only binding properties (e.g., for spaetzle) are desired, the product does not need to be whipped.

Dosage

EggField One Aquafaba replaces chicken egg whites in most applications at a 1:1 ratio and can therefore be used in the same dosage. Depending on the requirements of the final product, the quantity can also be adjusted.

Declaration & Storage

EggField One Aquafaba is made without ingredients such as soy, wheat, or other allergens. Additionally, no artificial additives such as preservatives or flavors are used (Clean Label*).

Unopened, EggField One Aquafaba should be stored at a maximum of 4°C and is then usable for three weeks. EggField One Aquafaba is freezable. After opening, consume within a few days.

Due to its natural state, the product may form agglomerates (clumps) and/or sediment may settle. This does not affect the functionality and safety of the product.
